Chia Seed Pudding

Chia is a unique little seed that swells and becomes jelly-like when exposed to water, milk, or juice. They are a good source of fiber and omega-3 fatty acids, also containing protein, carbohydrates, and other vitamins and minerals. Because of the way they increase in volume when absorbing liquid, they can also help you to feel full for longer. Ingredients:

  • 3 tablespoons Chia Seeds
  • 1 cup milk (or plant milk, or both!)
  • 1 tablespoon mixed berry jam
  • 1 banana (optional)

Instructions:

This recipe is so simple, all you really need is a jar and a spoon! Combine the seeds, milk, and jam in a mason jar and mix well. Wait for 60 seconds, then mix for another minute. Leave in the fridge overnight. (Tip: For a more complex flavor, try adding a 1/4 teaspoon of vanilla extract and a pinch of sea salt before refrigerating.) Slice and add a fresh banana before eating.

Sweetener options:

  • Jelly/Jam, agave, honey, or alternative sweetener.

Add in options:

  • Matcha powder, cocoa powder, spices, fresh fruit, dried fruit, vanilla or other extract, applesauce, or coconut chips.
