Ingredients:
- 2 cup Field Day flour
- 1/2 cup Field Day sugar
- 1/2 cup Field Day chocolate chips
- 1 tsp Field Day vanilla
- 1 tsp Field Day baking soda
- 1/2 tsp Field Day cinnamon
- 2 Field Day eggs
- 1 cup Field Day oil (I used sunflower.)
- 2 cups Field Day applesauce
Instructions:
Preheat your oven to 350 degrees Fahrenheit.
Line two muffin tins with paper or silicone liners and set aside. This batter rises quickly so you want the cups ready to go as soon as the batter is done.
Combine applesauce, eggs, vanilla, and oil in a bowl. Mix well and set aside. In a separate bowl combine the flour, sugar, baking soda, and cinnamon. Add the chocolate chips and mix well.
When both mixtures are ready, make a well in the center of the dry ingredients. Pour in the wet ingredients and stir thoroughly and quickly, making sure there aren’t any clumps of dry flour.
Scoop the batter into the prepared muffin cups. For mini muffins the cups can be filled nearly to the top. For a regular muffin tin, fill the cups about 2/3 full.
Bake until a toothpick comes out clean. This will be 10-12 minutes for mini muffins, or 25-30 minutes for regular muffin tins. Remove from tins and cool on a wire rack.
