Ingredients:
- 1 cup hulled sesame seeds
- 2 cups unbleached white flour
- ½ tsp soda
- 1 tsp baking powder
- ½ tsp salt
- ¾ cup oil
- 1 egg
- 1 cup brown sugar
- ½ cup shredded coconut*
- ½ tsp vanilla
Lightly toast sesame seeds and coconut until light brown. Sift together flour, baking powder, soda, and salt. Cream oil and brown sugar. Add egg, vanilla, sesame seeds, and coconut. Beat well and blend in dry ingredients. Shape into balls (about 1 rounded Tbsp each). Place on cookie sheet and flatten with fork. Bake at 350 degrees for 10–15 minutes. Makes 2-3 dozen cookies.
*I often skip the coconut and the cookies taste fine, maybe even a little better.
