Ingredients
- 16 squares of organic honey grahams, finely crushed (about 1 ½ cup crumbs)
- 3 Tbsp organic sugar
- 3 Tbsp organic butter or margarine, melted
- 3 pkg (8 oz each) organic cream cheese, softened
- ¾ cup organic sugar
- 1 tsp organic vanilla
- 3 organic eggs
- 1 ½ cup organic fair-trade chocolate (crushed)
- 2 cup miniature marshmallows (divided)
- ½ cup bulk flaxseed(blended)
- Organic honey(optional)
Preheat oven to 325 degrees if using a silver springform pan. Only 300 degrees. If using a dark non-stick springform pan. For the crust, mix graham cracker crumbs, flax seed, sugar, and butter/margarine together and press into bottom of 9 in. springform pan. Bake 10 minutes. For filling, mix cream cheese, sugar and vanilla with electric mixer until blended. Add eggs; mix on low speed just until blended. Stir in 1 cup of chocolate chunks, and 1 cup marshmallows. Pour over crust. Sprinkle with remaining ½ cup chocolate chunks and 1 cup marshmallows. Bake for 55 minutes or until center is almost set if using a silver springform pan. Bake at 300 degrees for 55 minutes or until center is almost set if using a dark nonstick springform pan. Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim or pan. Refrigerate 4 hours or overnight. Drizzle with honey before serving if desired. Makes 12 servings.
