Gluten-free Pumpkin Pancakes

This is a nice simple recipe that my family makes all the time.


  • 1 Box Glutino Gluten Free Pancake Mix
  • 2 2/3 cup Milk
  • 1/2 cup Vanilla Yogurt (as an egg replacement)
  • 1 can Omena Organics Pumpkin
  • 6 Tbsp melted Butter
  • 1 Tbsp Cinnamon
  • 1 tsp Nutmeg
Mix all of the ingredients together and cook on a hot griddle in batches. Makes approximately 20-25 pancakes. We usually cut the recipe in half or freeze some of the pancakes for later.
