Parsley Pick-Me-Up

20151201_121926_resizedSometimes around the holidays we find ourselves overdoing it (eating, celebrating, planning) or underdoing it (sleep, quiet time, vegetables). It’s easy to get worn out and overwhelmed. This quick, fresh tasting beverage can be a nice way to recharge and re-energize yourself when it all starts to feel like a bit much.

Ingredients:

  • 16oz coconut water
  • 12-14 sprigs fresh parsley
  • 1 apple, core removed
  • 1 Tbsp liquid ginger
  • 1 Tbsp lime juice
  • 2 probiotic capsules (optional)

Cut the apple into a few big chunks, remove the bottom 1-2 20151201_122453_resizedinches of parsley stems, and put everything into the blender. Blend until smooth. (Tip: There will be a bit of fiber left in the drink, but not much. If you prefer less pulp, peel your apple first, or run the finished drink through a strainer.) Drink immediately or chill for up to 6 hours. Serves 2.
